A Busy Writer’s Lunch

What’s possible when you have a well-stocked pantry.

Clockwise from right –

  1. Basmati rice  (leftover from dinner)
  2. Green bell peppers (called capsicum in India) left to char on one side on a frying pan and sprinkled with coarse salt afterwards. A highly tastya and quick way to cook green pepper, the peppers are crunchy yet caramelized. Yum!
  3. Sundried tomato tofu – bought from my favourite organic brand and panfried at home.
  4. Vegan creamed spinach – storebought frozen. Meant to be thawed out and heated at home.

Disclaimer: Notwithstanding the picture, no potted plants were injured or consumed during this lunch.
